Old Fashioned Ice Cream

4 Quart

2 1/2 C sugar
1/4 C plus 2 Tbsp flour
1/2 tsp salt
5 C milk
4 eggs, beaten
4 C whipping cream
2 Tbsp vanilla extract (or if your name is Mary, at least 3)

Combine sugar, flour and salt in saucepan. Gradually stir in milk. Cook over medium heat approximately 15 minutes or until thickened, stirring constantly.

Gradually stir about 1 cup of hot mixture into the beaten eggs. Add egg mixture to remaining hot mixture, stirring constantly. Cook 1 minute; remove from heat. Refrigerate 2 hours. Combine whipping cream and vanilla in large bowl; add chilled mixture, stirring with wire whisk to combine. Freeze in ice cream maker.

*Update* December 1, 2012 - We made Peanut Butter Ice Cream by adding one cup of peanut butter, after cooking but before adding eggs, and stirring until melted. DELICIOUS!

Smoothie

1/2 cup milk
1/2 cup plain nonfat yoghurt
Your choice of berries/fruit (e.g. 8 berries, or one banana, or one peach/nectarine, or any combination thereof!)
1 Tbsp. Sugar Substitute
8 ice cubes
Vanilla

Blend all ingredients together. YUM!
