Quick & Easy Brownies

2 Cups Sugar
1 3/4 Cups Flour
1/2 Cup Cocoa
1 tsp Salt
5 Eggs
1 Cup Oil
1 tsp Vanilla
1 Cup Chocolate Chips

Preheat oven to 350 degrees F (180 C) and grease 9x13 pan. Stir together first 7 ingredients with a spoon JUST UNTIL WET! Pour into pan. Top with chocolate chips. Bake for 30 minutes.

**Just a note! I like to triple the amount of vanilla and add 1 Tbsp.
**You can replace the choc chips with many kinds of sweets - smarties, m&m's, chopped up choc bar, reeses pieces, etc.

Easy & Delicious Crockpot Chicken

6 Chicken Breasts (can be frozen)
1 8 oz. bottle Italian Dressing

Put both in crockpot and cook 4-6 hours on low. Drain Italian dressing, shred chicken and return to crockpot. Add:

2 cans condensed Cream of Chicken (&/or Mushroom) Soup
OR 2 recipes of Cream Soup Substitute OR 2 packets of dry Cream of Chicken soup mix prepared with 2 cups water (for THM use 2 cups water, gluten free chicken stock powder and thicken with glucomannan)
2 - 8 oz. package Cream Cheese
2 C Chicken Broth
1 tsp Basil
1 tsp Thyme
Salt & Pepper to Taste

Cook on low for 1 hour.
Serve over pasta or rice (our favourite is Basmati Rice). (Now that I do THM, I eat mine over roasted vegetables.)

*Update* Can also cook on stove top. Cook chicken breasts in Italian Dressing. Shred chicken and return to pot with Italian Dressing. Add remaining ingredients and stir, heat until heated through.

Old Fashioned Ice Cream

4 Quart

2 1/2 C sugar
1/4 C plus 2 Tbsp flour
1/2 tsp salt
5 C milk
4 eggs, beaten
4 C whipping cream
2 Tbsp vanilla extract (or if your name is Mary, at least 3)

Combine sugar, flour and salt in saucepan. Gradually stir in milk. Cook over medium heat approximately 15 minutes or until thickened, stirring constantly.

Gradually stir about 1 cup of hot mixture into the beaten eggs. Add egg mixture to remaining hot mixture, stirring constantly. Cook 1 minute; remove from heat. Refrigerate 2 hours. Combine whipping cream and vanilla in large bowl; add chilled mixture, stirring with wire whisk to combine. Freeze in ice cream maker.

*Update* December 1, 2012 - We made Peanut Butter Ice Cream by adding one cup of peanut butter, after cooking but before adding eggs, and stirring until melted. DELICIOUS!

Smoothie

1/2 cup milk
1/2 cup plain nonfat yoghurt
Your choice of berries/fruit (e.g. 8 berries, or one banana, or one peach/nectarine, or any combination thereof!)
1 Tbsp. Sugar Substitute
8 ice cubes
Vanilla

Blend all ingredients together. YUM!
